San José

Eudoro Guillen is a second-generation coffee farmer at Finca San José in Nicaragua. Together with his wife, Norma, he continues his family’s legacy while introducing innovative fermentation techniques and sustainable farming practices. In 2021, both family farms received Cup of Excellence awards for their Caturra lots.

San José is part of Bridazul, a holistic project founded in 2019 by Claudia Lovo to support around 50 coffee producers in Nueva Segovia. Through processing expertise, agronomic guidance, and fair pricing, Bridazul helps producers improve coffee quality while ensuring economic and environmental sustainability.

Created by Claudia Lovo, SuperNatural brings together coffees from farms with similar altitudes and varieties, ensuring consistency and ease of roasting. Unlike other natural coffees in the range, this lot undergoes semi-carbonic maceration, a technique inspired by winemaking. Coffee cherries ferment in sealed, temperature-controlled tanks with added CO₂, developing fruity aromas, sweetness, body, and complexity. The cherries are then dried on African raised beds to further enhance their sweetness.
