This washed Typica comes from the Cajamarca region, grown at around 2,000 meters above sea level. The high altitude and cool mountain climate slow ripening, concentrating sugars and aromatics, resulting in a clean, vibrant profile with notes of citrus and blackberry sweetness wrapped in delicate floral character.
José Guevara
José Guevara farms 4 hectares at La Lúcuma in Callayuc, near Querocoto in northern Peru. He cultivates Typica, Yellow Caturra, and Bourbon within an agroforestry system that integrates shade and fruit trees, supporting biodiversity and cup complexity.
He is part of the Aromas del Valle cooperative, which brings together nearly 600 producers in Cajamarca. The cooperative supports microlot development, processing, and access to improved varieties, helping producers improve both quality and traceability.
Processing
This coffee is processed using the traditional washed method. After selective hand-harvesting, cherries are pulped and fermented in water tanks until the mucilage breaks down naturally. The coffee is then fully washed and dried slowly on raised beds in cool mountain air. The result is a clean and transparent cup with bright acidity, floral lift, and a long, elegant finish that reflects its high-altitude origin.
