Finca Buenos Aires, located in Dipilto, Nueva Segovia, is the founding farm of Cafetalera Buenos Aires and has a coffee-growing legacy of more than 60 years established by Don Luis Emilio Valladárez. Today, the farm is led by his son, Olman Valladárez, and is internationally recognized for its commitment to quality, sustainability, and multiple Cup of Excellence Nicaragua awards. Sustainable practices such as shade management, organic fertilization, cover crops, and soil conservation help protect biodiversity and ensure long-term farm health.

Only fully ripe cherries are selectively harvested and carefully sorted before processing. After depulping, the coffee undergoes controlled fermentation, is washed with clean water, and slowly dried on raised beds to an ideal moisture level. This traditional washed process produces a balanced, sweet, and consistent cup profile that reflects the farm’s dedication to excellence.

Peak flavour: 2–3 weeks after roast. Giving the coffee time to rest allows its sweetness, clarity, and complexity to fully open up.
