Finca Buenos Aires, located in Dipilto, Nueva Segovia, is the founding farm of Cafetalera Buenos Aires and carries a legacy of more than 60 years initiated by Don Luis Emilio Valladárez. Today, the farm continues under the leadership of his son Olman Valladárez, maintaining and elevating its tradition of excellence. Its long-standing commitment to quality, innovation, and sustainability has earned national and international recognition, including multiple Cup of Excellence Nicaragua awards. Sustainable practices include contour planting, organic fertilization, shade management, cover crops, and wind barriers that protect soil health and biodiversity. The farm continues refining post-harvest practices, renewing coffee areas, and introducing specialty varieties while reinforcing long-term environmental responsibility.
Selective harvesting ensures only fully ripe cherries are collected at optimal maturity. Careful sorting removes floaters and defects, preserving lot uniformity and quality. After mechanical depulping, the parchment is fermented under controlled conditions, then washed with clean water and dried on raised beds under monitored airflow and sunlight until reaching 10–11% moisture. This washed process creates a balanced, sweet, and round cup profile typical for Finca Buenos Aires.
