Papayo

This coffee is now in our rescue beans category - these beans are 3 months from the roast date, which is when most roasters recommend consuming them. However, they are still well within their best-before date and remain full of character and perfectly brewable.

Note from the roastery: The latest product of our highly fruitful partnership with Luis Marcelino of Aroma Nativo in the Huila region of Colombia. A Papayo varietal harvested at 1700 to 1750 masl on 16/09/25 and processed as a Hydro Honey. Luis's scientific approach: a controlled fermentation in an anaerobic environment before pulping, a drying phase of a few days, a second fermentation with rehydration using selected yeasts and bacteria, a 13 day drying phase, then a 3 month stabilisation period.

A tropical cup heavy with apricot, mango and papaya, easily enjoyed either black or white, either espresso or filter.

All NOSTOS coffees are roasted for both filter and espresso.
