This coffee is now in our rescue beans category - these beans are 3 months from the roast date, which is when most roasters recommend consuming them. However, they are still well within their best-before date and remain full of character and perfectly brewable.
Choco Sponge is a natural Yellow Catuai produced in Cambuquira, Mantiqueira de Minas, by DAK´s longtime partners at Jaguara Coffee. This lot stood out on the cupping table for its creamy texture and dried fruit sweetness. Expect melted milk chocolate, caramel and plum, leaning into the classic side of Brazilian flavours and perfect for an easy-going espresso.
Natália is a key partner and supplier in Brazil, managing both her own farms and the exporting company that sources coffee from other regional producers. A second-generation producer, cupper, and trader, she also oversees her business and continuously refines her production methods. By experimenting with different fermentation and drying techniques, she produces a diverse range of coffee profiles.
